I’m trying to create a new display format, adding in a column that has a datatype of boolean. In the Field Selection Editor I can select the field and that field then is displayed in the Selected Fields list however when I click ‘OK’, Workbench just hangs.
Is it NOT possible to add this datatype to a display format? I did not see anything in the online help that limits the datatypes.

There is no data type limitation I am aware of, but I was able to reproduce the behavior you report in all workbench views that use the Field Selection Editor. I have logged a bug reporting the behavior.
