If I’m understanding correctly, CM1 does not offer a “subscribe by email” option for blog posts. Is anyone using a third-party service for their RSS feed?

Correct, CM1 does not currently have this option.
However, some of our clients use their marketing automation tools like Hubspot to achieve this and have it work with their other email subscription lists.
Email service providers like MailChimp offer this service as well.
